EasyPeasie Veggied-Up Cookies Recipe

First, here's your quick and "easy peasy" recipe...

Add a tablespoon of EasyPeasie Red Blend to your cookie dough. One tablespoon of EasyPeasie is equivalent to half a cup of veggies!

And here's your detailed recipe!

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 2 tablespoons EasyPeasie Red Blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped nuts (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, brown sugar, and vanilla extract until creamy and well combined.
  3. Add Eggs: Beat in the eggs one at a time, mixing well after each addition.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, EasyPeasie Red Blend, baking soda, and salt.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the butter mixture, beating until well blended.
  6. Stir in Chocolate Chips and Nuts: Gently fold in the chocolate chips and nuts (if using) until they are evenly distributed throughout the dough.
  7. Drop onto Baking Sheet: Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake: Place the baking sheets in the preheated oven and bake for 9 to 11 minutes or until the cookies are golden brown. Remember, ovens may vary, so keep an eye on them to avoid over-baking.
  9. Cool: Once baked, remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes. Afterward, transfer them to wire racks to cool completely.
  10. Serve and Enjoy: Once cooled, serve your delicious EasyPeasie Red Blend Chocolate Chip Cookies with a glass of milk or your favorite beverage.

Note: The addition of EasyPeasie Red Blend not only boosts the nutritional value of these cookies but also adds a subtle, sweet veggie flavor that complements the sweetness of the chocolate chips. Enjoy this delightful twist on a classic treat!
