Ingredients:
- 2 cups cooked jasmine or basmati rice (preferably left overnight in the fridge)
- 2 tablespoons vegetable oil or sesame oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (like bell peppers, carrots, peas, and corn)
- 2 green onions, sliced
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce or tamari

Instructions:
- Prep the Rice: If you're using freshly cooked rice, spread it out on a tray and let it cool for a bit. This helps to get rid of excess moisture and makes your fried rice less mushy.
- Sauté Aromatics: In a large skillet or wok, heat the oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute.
