Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 celery stalks, chopped
  • 8 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons EasyPeasie Turmeric Blend
  • 2 teaspoons salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 8 oz egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Instructions:

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add Broth and Chicken: Pour in the chicken broth and add the chicken breasts to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer.
  3. Season the Soup: Stir in the EasyPeasie Turmeric Blend, salt, pepper, thyme, and bay leaf. Allow the soup to simmer until the chicken is fully cooked, about 20-25 minutes.
  4. Cook the Noodles: In a separate pot, cook the egg noodles according to the package instructions. Drain and set aside.
  5. Shred the Chicken: Once the chicken is cooked through, remove it from the soup and shred it using two forks. Return the shredded chicken to the pot.
  6. Final Touches: Add the cooked noodles to the soup. Stir in the fresh parsley and lemon juice. Taste and adjust the seasoning if necessary.
