EasyPeasie Corn Muffins Recipe

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk (or buttermilk for tangier muffins)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons EasyPeasie Red Blend
  • 1/2 cup corn kernels (optional, for added texture)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Grease or line a 12-cup muffin tin with paper liners.

  2. Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt.

  3. Wet Ingredients: In a separate bowl, beat the eggs lightly. Add the milk, melted butter, and EasyPeasie Red Blend. Mix well.

  4. Combine: Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to overmix. If using, fold in the corn kernels.

  5. Fill Muffin Tin: Using a spoon or an ice cream scoop, divide the batter evenly among the 12 muffin cups.

  6. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Afterward, transfer them to a wire rack to cool completely.
