Ingredients:

  • 8 oz cream cheese
  • 2 cans (15 oz each) pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup EasyPeasie RedBlend
  • 1/4 tsp salt
  • 2 eggs (slightly beaten)
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 3 to 4 regular pie crusts

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 350°F.
  2. Creamy Pumpkin Base: In a medium-sized bowl or mixer, start by beating or softening the cream cheese. Once softened, add the pumpkin puree and continue to beat until well combined.
  3. Add the Sweetness: Gradually add the sugar to the mixture. As you slowly pour in the EasyPeasie RedBlend, take a moment to admire the beautiful color transformation that occurs. Add the salt and give it another good mix.
  4. Wet Ingredients: Incorporate the slightly beaten eggs, milk, and melted butter into the mixture. Beat until these ingredients are fully integrated.
  5. Flavor Enhancements: Finish off the filling by adding vanilla extract, cinnamon, and ginger. Beat the mixture until it's smooth and creamy.
  6. Pie Assembly: Pour the pumpkin filling into your pie crusts, ensuring an even distribution.
  7. Baking: Place the pies in the preheated oven and bake for approximately 50 minutes. You'll know they're done when you can insert a knife or toothpick into the center and it comes out clean.
