First, here's your quick and "easy peasy" recipe... 

Add 2 tablespoons of EasyPeasie Red Blend to your favorite sugar cookie recipe! Easy peasie ;)  And add more Red Blend to frosting to give it a pop of pink!

Ingredients:

For the Cookies:
  • 2 3/4 cups all-purpose flour
  • 1/4 cup EasyPeasie Red Blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

For the Pink Frosting:

  • 2 cups confectioners' sugar
  • 2 teaspoons EasyPeasie Red Blend
  • 2 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract

    Instructions:

    1. Prepare the Cookie Dough:

      • In a medium-sized bowl, mix together the flour, EasyPeasie Red Blend, baking soda, and baking powder. Set aside.
      • In a large bowl, cream together the butter and sugar until smooth and fluffy. Beat in the egg, then stir in the vanilla and almond extracts.
      • Gradually blend in the dry ingredients until just combined.
    2. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for at least one hour.

    3. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    4. Shape and Bake:

      • Roll rounded tablespoons of dough into balls and place them onto the prepared baking sheets.
      • Bake for 8 to 10 minutes, or until lightly golden. Let the cookies stand on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
    5. Prepare the Pink Frosting:

      • In a medium-sized bowl, mix confectioners' sugar, EasyPeasie Red Blend, milk, and vanilla extract. Stir until smooth and creamy. If the frosting is too thick, add a little more milk; if it's too thin, add more confectioners' sugar.
      • The frosting will naturally turn to a lovely pink/red shade due to the EasyPeasie Red Blend.
    6. Decorate the Cookies: Once the cookies are completely cooled, spread the pink frosting over the tops. Allow the frosting to set before serving.
