First, here's your quick and "easy peasy" recipe...
Add 2 tablespoons of EasyPeasie Red Blend to your favorite sugar cookie recipe! Easy peasie ;) And add more Red Blend to frosting to give it a pop of pink!
And here's your detailed recipe!
Ingredients:
For the Cookies:- 2 3/4 cups all-purpose flour
- 1/4 cup EasyPeasie Red Blend
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
For the Pink Frosting:
- 2 cups confectioners' sugar
- 2 teaspoons EasyPeasie Red Blend
- 2 tablespoons milk or heavy cream
- 1/2 teaspoon vanilla extract
Instructions:
-
Prepare the Cookie Dough:
- In a medium-sized bowl, mix together the flour, EasyPeasie Red Blend, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth and fluffy. Beat in the egg, then stir in the vanilla and almond extracts.
- Gradually blend in the dry ingredients until just combined.
-
Chill the Dough: Cover the bowl with plastic wrap and refrigerate for at least one hour.
-
Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
-
Shape and Bake:
- Roll rounded tablespoons of dough into balls and place them onto the prepared baking sheets.
- Bake for 8 to 10 minutes, or until lightly golden. Let the cookies stand on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
-
Prepare the Pink Frosting:
- In a medium-sized bowl, mix confectioners' sugar, EasyPeasie Red Blend, milk, and vanilla extract. Stir until smooth and creamy. If the frosting is too thick, add a little more milk; if it's too thin, add more confectioners' sugar.
- The frosting will naturally turn to a lovely pink/red shade due to the EasyPeasie Red Blend.
-
Decorate the Cookies: Once the cookies are completely cooled, spread the pink frosting over the tops. Allow the frosting to set before serving.
Tip: These sugar cookies not only have a delightful pink hue but also a nutritional boost from the EasyPeasie Red Blend. They're perfect for special occasions, holidays, or any day you want to make a little more colorful and nutritious!
